Harvest Types

These codes appear in batch designations on the Wholesale Menu. They describe how the fruit was harvested.

WFWhole FruitThe entire fruit body is taken, with only the bottom half-inch or so of the stem removed to clear residual substrate. This is the most complete expression of the mushroom as it grew.
C+Caps PlusThe fruit is topped close to the cap, leaving roughly half an inch of stem attached. Cap and a short stem section travel together.
CCapsMost or all of the stem is removed so that only the cap remains. This is the purest cap material.

STStems

Standalone stems are dried separately and become part of a different harvest lot.
